Restaurant Iris, located within the floating art installation Salmon Eye, offers guests a unique dining experience set against the majestic Hardangerfjord in Norway. Designed by Kvorning Design, the Michelin-starred restaurant features innovative ellipsoid architecture, harmoniously blending with an interior crafted by Norm Architects. It contrasts the striking steel curves of the building with soft lighting, bespoke furniture, and natural materials, creating an intimate and warm atmosphere.
The restaurant emphasises sustainability with a set tasting menu focused on local ingredients, celebrating the vibrant life beneath the sea. Guests arrive via a scenic boat ride and enjoy panoramic views of the fjord, glaciers, and mountains while indulging in their culinary experience. The environment, with its seamless integration of nature and cuisine, enhances the overall dining experience.
The interior design complements the building’s brutalist architecture, with undulating forms and custom-built furniture that harmonises with the structure’s smooth curves. Rather than using conventional rectangular furniture, the design integrates bespoke pieces, portable lamps, and custom service stations to maintain a natural flow throughout the space. The result is a harmonious blend of modern strength and comfort, with materials like walnut wood, plush carpets, and upholstered furniture creating a cozy retreat amidst the harsh Nordic landscape.
To enhance intimacy, the restaurant’s once-open room has been divided into smaller spaces. This division creates a sense of discovery, allowing guests to gradually explore the restaurant. The thoughtful integration of natural textures and flowing lines in the design connects the space with the surrounding natural beauty, reinforcing the restaurant’s commitment to sustainability and providing a sensory connection to the fjord.
The table settings at Restaurant Iris reflect the Nordic surroundings, with natural materials, earthy tones, and minimalist design. This grounding in the local landscape enhances the connection between nature and cuisine. Beyond its role as a restaurant, Salmon Eye is a floating aquaculture visitor centre, designed by Kvorning Design. The 1000 sq m structure, clad in stainless steel scales, resembles the silvery skin of salmon and stands as a striking landmark visible from miles away, even from the air.
